Banana Bread Recipe

The other night Peyton and I decided to bake some banana bread. Peyton absolutely loves banana bread, and I have to admit I really like it too!

I got so many comments and requests for the recipe… that I decided to make this my Friday food blog!

Hope you enjoy it as much as we do… It’s actually very easy to make… It does not require a lot of time other than the baking! I would love to hear her each and everybody’s feedback on this.

  • 3 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tablespoon of ground cinnamon
  • 1 egg
  • 1/4 cup of melted butter
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

  1. Preheat oven to 325 degrees F. Grease a 9×5-inch loaf pan
  2. Combine all ingredients together in bowl, mix together on medium speed until everything is completely mixed.  Pour batter into the prepared loaf pan.
  3. Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour

A Calming Lakeview

A week ago this past Friday… My sister… Peyton and I were invited to go to Walden’s Lakeview dining up in beautiful Lake Conroe in Montgomery, Texas.

I have been up to the Lake Conroe area multiple times, but I had never been to this particular area.

We were invited by the social media team of the restaurant to try three new menu items that they had just put out. I was super excited about this dining experience… Because I love to sample new food.

We were given a preview of what the menu was going to be, they we’re going to be three healthy salads, and each one looked better than the next.

I was extremely excited to try the ceviche, it sounded absolutely amazing!

As I said earlier in the blog I had never been to this particular area of Lake Conroe… So I was excited to see it.

When we got to the restaurant I was beyond impressed… It was a beautiful restaurant, with an absolutely gorgeous view. Upon entering… it was just as pretty inside.

The staff was very pleasant, polite and respectful. Upon being seated at our table… I took a look around the restaurant and with all the beautiful windows at the front of the restaurant, I realized we had a spectacular view of the lake. It didn’t appear as if there was any bad seat in this entire restaurant.

There was live music and dancing… Which for a moment I was a little concerned might stress Peyton. Although, Peyton usually does well in active environments, sometimes a combination of smells, sounds and activity can cause him to become stressed.

I looked at him and asked him if he was stressed, he said absolutely not…. the view was so beautiful and calming that it took his mind off of everything else.

There’s a beautiful deck that encompasses the entire restaurant front, he went out there at one point, and took pictures. When he came back in it suddenly hit me… if he were stressed… He could go stand on that deck, look at the water… take in the beautiful sounds, breathe the fresh air and it would lower his stress and anxiety.

All three of our salads came around the same time… So I was excited to try each one of them. We also got fresh rolls and chips as well.

I cannot say one bad thing about what we ate! Everything was absolutely wonderful.

I honestly can say that this is one of my favorite restaurants now. Between the view, the food, the service and the all over experience…. you can’t beat Walden’s Lakeview dining.

I know this entire blog sounds like just an advertisement for it… But trust me… it is as positive as it is in this blog. because it deserves this positivity.

The restaurant did not put any kind of pressure on us to give a positive review… they wanted us to give an honest review… and my honest review is 10 stars out of five.

I look forward to going back again and I specially look forward to taking my husband for date night, because this restaurant is great for date night… for families… including autism families.. for dancing, for relaxing… and especially for Eating.

Peyton’s SelfCare

One of the biggest topics nowadays, especially on social media is self-care. It is something that each and everyone of us really truly need to not only be aware of, but to actually practice.

We all have our different versions of what self-care really is, because we all live different lives, have different stresses, different anxieties and triggers etc.

What may work for me, may not work for you. Having said that… There are some commonalities among all self-care.

In this blog I’m going to do a “mini interview”… With Peyton about how he defines self care for him. I can tell you for an absolute fact, that he has designed this routine of self-care for himself, by himself. It definitely seems to work 90% of the time.

I am in absolutely firm believer in self-care, I know I need it with my GAD… General anxiety disorder. There are days that it is very difficult for me to even function.

I try not to continuously talk about it, because not only do I know that other people don’t want to hear about it all the time… But I don’t wanna hear myself talk about it all the time!

I’ve sat down with Peyton and told him that is fully acceptable and actually I encouraged him, to have his own routine of self-care. I can’t make that for him.. because I don’t know what truly will get him to calm down. These are the following six things that he has told me really do help with his stress/anxiety/autism.

 

 

 

 

 

1. Human touch massage chair

2. Tex ( our dog)

3. Socks

4. Weighted Blanket

5. Lavender

6. coloring… drawing

I’m sure you’re really wondering about number three… the other five are pretty self-explanatory.

Ever since Peyton has been little, he has loved socks. He’s always worn socks… When he was real little, it was very hard to get him to wear sandals because he always wanted to have socks on!

He has worn a lot of different socks over the years, some he has liked, others he can’t stand.

Couple of months ago a company called SmartKnit… Sent us a couple of pair of socks.. one white and one in black, they are seamless socks they hug your feet.. Peyton absolutely loves these socks. While socks may not matter to some of us, they really matter to him and I’m sure there are others out there, who feel the same way. I highly suggest you check into these socks. I wore them a couple times when I could get Peyton to share… They are wonderful… Here is the link.

Like I said earlier in the blog self-care for Peyton is so important to him and I… I want him to not stress and be anxious. These six items REALLY do help.

He is so lucky to have a human touch massage chair, and I’m going to tell you it is the greatest chair, and I cannot say enough good about the company. Here’s the link to their website.

Colds, Flu and Probiotics

It’s that time a year again… Cold and flu season… I really really hate this time of year.

Today, I actually got a text message from Teladoc about how the flu has hit us here in Texas. I’ve always stressed whenever my kids have had the flu, but I especially stress when Peyton has the flu. I’m a big believer though in prevention. Since I’m not a big fan of taking medicine and I’m especially not a big fan of my kids taking medicine…I especially love to use all natural preventive products.

We are big believers in natural products.

In the last couple years we’ve really become very adamant on having probiotics. Couple months ago I wrote a blog about Klaire labs probiotics… We have become very big fans of their products, in our home.

With the flu being rampant everywhere… we have two choices…. we can either really prepare our bodies and try to build up our immune systems to fight off colds and/or the flu, or we can just sit in our house 24/7 and never get around anyone. : (  Since the later is not what we wanna do, we will do the former! 🙂

Many times we don’t equate probiotics with the flu and/or colds… But did you know that probiotics can really help with so many things…. including the flu and cold season?

Here are just a few ways that probiotics can help you fight off colds and flu!

One way is probiotics can activate the defense in our immunity system, and help fight off the common cold and flu… It is also believed the probiotics can help fight the frequency that you get respiratory infection such as The common cold.

They can also help when you get diarrhea with the flu, probiotics can help lower your chances and lower the frequency and severity of the cold and flu by building up the good bacteria in your system and fighting the bad bacteria.

When your gut isn’t feeling well… Your whole body becomes run down… So using proper probiotics, can really make a difference during this cold and flu season.

This is not to say that only probiotics will help it, but if you’re anything like us.. in our household you definitely want to do everything you can to try to either avoid and/or lower the severity of a cold and/or flu.

This is especially important to me with Peyton, because I do not like to give Peyton medicine.. unless I absolutely have to.

So building up his immune system and getting rid of the bad bacteria in his system, and replacing it with good bacteria by having awesome probiotics definitely is awesome. I am also taking them because when Mom is sick… nothing is good! : )

A Special Gift

I wanted to share this video… some of you have already seen this… If you follow me on Instagram and or Twitter I know you’ve seen this.

I wanted to share it again, because I think this video is really a wonderful representative of what the  Holiday Season is all about.

It truly is about making others feel good… Giving… Sharing… Caring… Spreading love… Spreading kindness and doing the little things… You know the little random acts of kindness, that may not seem like such a big deal but to some mean everything.

Freddie Stevenson played football for the Florida State Seminoles… Seminoles are our favorite College football team.

He also went to the Chicago Bears! the Chicago Bears are our favorite NFL team!

Freddie already had a special place in our hearts. After he did this for Peyton… I can tell you Freddie has a very special place in all of our hearts.

His act of kindness, meant so much to Peyton and to the rest of us! I hope if you watch this video… it inspires each and everyone of you to do a random act of kindness!

Let’s spread the Christmas love! Let’s also make a it a goal to spread it throughout the whole year!

I know it seems cliche to say, but it’s really true… together we are better…. together we are stronger!
