Banana Bread Recipe

The other night Peyton and I decided to bake some banana bread. Peyton absolutely loves banana bread, and I have to admit I really like it too!

I got so many comments and requests for the recipe… that I decided to make this my Friday food blog!

Hope you enjoy it as much as we do… It’s actually very easy to make… It does not require a lot of time other than the baking! I would love to hear her each and everybody’s feedback on this.

  • 3 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tablespoon of ground cinnamon
  • 1 egg
  • 1/4 cup of melted butter
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

  1. Preheat oven to 325 degrees F. Grease a 9×5-inch loaf pan
  2. Combine all ingredients together in bowl, mix together on medium speed until everything is completely mixed.  Pour batter into the prepared loaf pan.
  3. Bake in the preheated oven until a toothpick inserted in the center of the bread comes out clean, about 1 hour

Love, Anxiety and Hot Cocoa

Ever since my older kids were little, I have had a tradition of making them hot chocolate when it was cold out, especially when they didn’t feel good… Or when they just kind a needed that extra internal hug.

I absolutely love hot chocolate, I always have! and I love to add different flavors into my hot chocolate. I have to admit my favorite hot chocolate probably is when I add peppermint to it. Each of my kids liked something different with their hot chocolate… So I’ve learned to make hot chocolate with vanilla, ice cream, peppermint and even banana among other flavors… I know it sounds a little strange to have banana,  but trust me.. it taste better than it sounds.

Anybody who knows me, knows I love mugs, I collect mugs. I guess part of the reason why I love mugs so much is because I equate them with sitting down and having a cup of hot chocolate or tea or coffee and just enjoying myself or spending time with my kids.

We always had a tradition of having hot chocolate, before we opened our presents… I love having  little traditions like that.. and I love that one with my kids! I know that when they see hot chocolate it reminds them of those positive childhood memories.

Peyton and I absolutely love having hot chocolate together… As I’ve discussed many times my hubby is an oil guy, so he’s not always home. When it gets cold, Peyton and I have a tradition of sitting and having a cuppa hot cocoa and relaxing. Sometimes we just talk… Sometimes we watch TV together and sometimes we just relax. Although I love hot chocolate all year round, I especially love it during the holidays. There is something very magical to me about hot chocolate and Christmas.

There’s something very relaxing to me about sitting in front of the fireplace with the Christmas tree and mantle lights on, drinking a cup of hot chocolate… In one of my Christmas mugs… With two peppermint sticks in my hot chocolate.

I talk a lot about that I have GAD… General anxiety disorder in my blogs… Having my cup of hot chocolate is one of the ways that I help lower my anxiety during the holiday season.

I think we all have those little things that we do, or places that we can go that allow us to destress and calm down… And as silly as it sounds, hot chocolate is one of those for me. I know Peyton feels the same way.. there’s something very soothing to him about a cup of hot chocolate.

I’m including hear my favorite hot chocolate recipe… This is a very common hot chocolate recipe I know it’s out there in many places, so I’m not pretending it’s mine… But I’ve also added some of the changes that I do to it to make it different…all food disclaimers apply! : )

Ingredients:

  1. 1/4 cup unsweetened cocoa powder
  2. 1/2 cup granulated sugar… I add a pinch of brown sugar
  3. 1/3 cup hot water
  4. 1/8 teaspoon salt
  5. 4 cups milk (dairy or non-dairy) I usually do 3 cups milk and one cup french vanilla creamer
  6. 1 teaspoon vanilla extract or ! teaspoon Almond extract or 1 Teaspoon Peppermint extract… this is my favorite

Instructions:

  1. In a medium saucepan, combine the cocoa powder, sugar, water, and salt over medium heat.
  2. Cook, stirring constantly until smooth and bring to a simmer.
  3. Reduce heat, and stir in the milk, do not boil.
  4. Remove from the heat and stir in the vanilla. Pour into mugs and serve immediately.

Our Awesomism Texas Chili

If you’re like us, you really love smoked brisket… My husband makes one of the best smoked briskets, I’ve ever had in my life. I was never really all that much into brisket, and can honestly tell you that I hadn’t had it a lot, before I moved to Texas. Now I’ve become a huge fan of it. We have a Traeger grill which is one of the best for smoking brisket… Well, actually I love our Traeger grill for everything. Unless you have a big family or you wanna freeze some of your brisket, you’re going to have brisket left over. Here is a really (awesomism) recipe that I kind of threw together myself for our version of Texas chili. I add the ground beef with the Brisket because it is what Peyton loves….

This is an easy recipe and awesome for this time of the year! it’s quick

Remember this is using leftover brisket…

Here are ingredients of making Texas Chili:

  • 1 lb smoked brisket cut into small thin  cubes
  • 1 lb ground beef … I cook this before time, so it is fully cooked and browned
  • 1 large white onion diced
  • 1 green bell pepper diced
  • 1 jalapeño pepper diced
  • 1 clove garlic minced
  • 1 15 oz can Ranch Style beans
  • 1 15.5 oz can Buffalo Beans
  • 1 cup grated pepper jack cheese
  • 1 24 oz can of tomato sauce
  • 1 28 oz can diced tomatoes
  • 1/2 tbsp brown sugar
  • 1 tbsp  chili powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp brown mustard
  • 1 tbsp pepper
  • 2 Tbsp water

Throw it all together… again make sure that the ground beef and brisket is fully cooked first! I dump everything into a crock pot and cook it on High for 2 hours and medium for 6… checking every so often and stirring… when checking.

I add 1/2 cup of the grated pepper jack cheese 1/2 way through and put the rest on top after it is done! I love sour cream and tortilla chips with mine as well. Please note that the cheese can be eliminated if you want.

Homemade jalapeño chicken pot pie

I first published this Blog Nov 16 last year… I thought it was perfect for this year again! This is perfect for our 45 Awesomism Days of the Holidays.. This recipe is easy, yummy and best of all can be used after Thanksgiving using Turkey!

 

 

About  a month ago my brother-in-law gave us some amazing  homegrown jalapeño peppers. I’ve never been a big fan of jalapeño peppers… But these were so good, I couldn’t eat enough of them.

Mark used most of them to make some amazing stuffed peppers … But I put three large ones of them in the freezer.

We’ve had our first real cold snap here in Houston… So I was thinking tonight of something that I could make that would warm us up… Wow we decorated for Christmas.

We have Christmas music on in the background… Waiting for the next football game to come on and I just really felt like having a really cozy dinner. Peyton loves chicken pot pie,so I thought why not try my own recipe from scratch.

Being as my house is all torn apart because we’re decorating… I wanted to make something quick and easy. This is a great recipe for the holiday season… Because as you get so busy you can quickly still prepare a meal. Turkey can also be substituted for chicken.

As with all my recipes… Please make sure that you don’t have any food allergies, and that your food is fresh and make sure it’s thoroughly cooked… Basically all the disclaimers!

Ingredients:

-1 cup frozen mixed vegetables
-1 1/3 cup cut-up cooked chicken..
– 3 large finely chopped  jalapeño peppers
-1/4 cup finely chopped red onion
-1 can (10.5 oz) condensed cream of jalapeño soup
-1 cup Biscuit mix
-1/3 cup milk
– 1/2 cup shredded cheese
– 1 egg

Directions:

Heat oven to 400ºF. Mix vegetables,jalapeño  peppers,onion, chicken and soup in ungreased 9-inch glass pie plate or casserole dish
Stir together remaining ingredients with fork until blended. Additional milk can be added if too dry. Pour into pan.
Bake 30 minutes or until golden brown.

Friday Cup of Coffee

I absolutely love a great cup of coffee… Mark and I make ours with a French press… We buy flavored coffee and add flavor creamer‘s… I add cinnamon to mine as well, Mark is not a big cinnamon fan like I am… So we have two different containers for our coffees… As well as two different French presses.

Many don’t know it but yeah man what is the “birthplace“ of coffee I actually didn’t know that until I went to Yemen. I was given some coffee as a gift when I was there, and I must say it was some of the best coffee I’ve ever had.

It isn’t only the coffee itself though, the location, countless etc. is part of a truly awesome “coffee break” experience. One of my favorite times of the day when my older kids were younger was to sit with my legs in our pool and drink my morning coffee… We live on an acreage And it was so quiet and peaceful.

It was a nice way to start my day before the stresses of kids, homeschooling work etc. started. My kids used to buy me coffee mugs for presents and to this day I cherish them and other personal mugs! There’s something comfortable about a quiet coffee time. It comes the mind and the body. As my older kids become adults they still didn’t understand why I valued my morning cup of coffee, as they now have their own morning rituals.

One of my new favorite morning rituals… Is my Sunday morning ritual, where I go and sit in the fire side café at the Woodlands United Methodist Church… And have my coffee and listen to the church service… It is a wonderfully comfortable and calming place… There is a big fireplace cozy leather chairs and couches… The coffee is wonderful and the ambience is even better. I cherish my morning coffee… Not so much because of where I have but What it means to me. Do you have a morning ritual that you really enjoy?

Cinnamon Vanilla Coffee Creamer Recipe:

Ingredients:
14 oz. can sweetened condensed milk
1 3/4 cup Milk
1 TBSP vanilla
1 1/2 heaping tsp cinnamon
1 TBSP brown sugar
Instructions:
1. Add condensed milk and milk to blender and combine
2. To the milk mixture, add the vanilla, cinnamon, and brown sugar.
3. Blend until well combined, make sure the cinnamon is well mixed in.
4. Store air-tight in refrigerator.
5. Shake well before each use it as the cinnamon tends to settle at the bottom of the jar.
