Easy Chicken Salad on Naan Bread

Living in Texas it gets really hot… And sometimes I just like a really nice cold salad… And I love a salad on a great piece of Naan bread. I made this recipe one night when I was really in the mood for  chicken salad and Naan Bread! So I threw this together with items I had in the pantry and refrigerator.. it was quick,easy and super delicious.

It’s great for lunch and or dinner, it’s perfect for days that you don’t have a lot of time, but want something semi-healthy, and really flavorful! 🙂 Hope you enjoy!

•You can either use one can of 12.5 oz chunk chicken or Pan fry a chicken breast, cut up into chunks. I love using extra lean chunk chicken from the can.

•1/3 cup chopped red onion

•1/3 cup Reduced sugar Craisins

•1 small tomato chopped in small cubes

•1/3 cup skim mozzarella shredded cheese

•3 heaping Tablespoons of olive oil mayonnaise

•1Tablespoon of lowfat Italian dressing

•Fresh Ground Pepper to taste

Mix all the above ingredients together in a medium-size bowl. Cover bowl with lid and put in refrigerator for 3 to 4 hours to chill.

Serve on fresh Naan bread. This recipe makes enough for four chicken salad Naan bread servings.

I love serving fresh peaches on the side with this… And a little bit of cinnamon to the peaches, and you have a perfect meal!

Taco Shells Recipe

Taco Shells “Taco night brings the
(blended) family together!”
“Getting the hang of making these tacos! Fun, Simple & easy
for this busy, full-time working mom AND my kids love
them!” ~Nicole Lemire (Mike’s ex wife!)
Here is what you need:
● Corn Tortillas (we love sprouted corn tortillas)
● Avocado or Grapeseed Oil (higher smoke point)
● Garlic Salt
● Limes (optional but highly recommended)
1. Fill a small frying pan with oil and turn on medium heat*
2. Add 1 tortilla and cook on both sides until lightly crispy
3. Remove from oil and fold in half with 2 forks to create a shell
4. Sprinkle with garlic salt to taste
5. Half of our house likes to top our taco shells with fresh lime juice
*Depending if you are using electric or gas stove, you may have to
play with the correct temperature setting to set the oil for optimal
cooking of your shells. We use medium heat on a gas stove.
We usually go through a ton of tacos on taco night so add more oil
to your pan as needed. We like our tacos with ground turkey or my
crockpot whole chicken, black beans, cheese, avocado, tomatoes,
Sriracha and lactose free sour cream.

Easy English Muffin Pizza

Peyton absolutely loves pizza… He likes just about any kind of pizza. His favorite pizzas are the ones his dad makes. So when he is out on the oil rig, it’s a little difficult for me to make pizza anywhere near as good as his.

His dad will make some pizzas and freezes them so he can have them when he’s  gone. Needless to say he always wants to eat the pizza right away! 🙂

So I tried to come up with an idea so that he’ll like and still get some sort of pizza… I used to make these all the time for his older siblings when they were young. I decided to teach Peyton how to make them.

I know a lot of people make these, But I know with me… Sometimes I’m so busy I forget simple solutions to big things. By having Peyton be able to make these himself, it helps both of us out and allows him to create his own pizza.

It’s teaching him a life skill, as well as allowing me some extra time, because he’s making them himself. This way he can also decide what he wants to put on it.

His favorite one is with an English muffin, two slices of tomato, six pieces of pepperoni, skim mozzarella cheese…garlic and Italian seasoning… Sometimes he adds onions. *

We toast the English muffin lately. Then put a slice of tomato on each side. Top that with some skim mozzarella cheese and Italian seasoning with garlic. We then put that under the broiler for two minutes on high. Take it out… And three pieces of pepperoni to each side… Put a little bit more cheese on top of that, and back under the broiler for a minute and a half. **

This is great for lunch with a bowl of soup or you can make a couple of them.

Ingredients needed:

English muffin

Two slices of fresh tomato

Half a cup of skim mozzarella cheese shredded

Six pieces of pepperoni

Season to taste

*As with all Recipes… check for food allergies and use caution when using broiler.

**Cheese May be really hot use caution

Peyton’s fruit smoothie recipe

Peyton  loves Smoothies, which I’m really happy that he does. Mark got him in the habit of having a smoothie. Mark and I used to make the smoothies, but I encouraged Peyton into learning how to  make his own.

Before we go any further with this recipe I want to make a disclaimer… This smoothie has ingredients  in it that people may not like or may not be able to tolerate due to food allergies. Please check all the ingredients before starting! There are a couple of surprise ingredients at the end… Which can be added as extras or left out.

First time Peyton made this smoothie I wasn’t sure how it was going to taste. I really thought he was just putting everything in that he liked, but didn’t necessarily go together. I’m proud to say I was wrong. I love the taste of it,

Peyton makes this smoothie recipe in the morning, and has it with an egg. It contains oats, fresh fruits… He varies the types of fruit he puts in it depending on the season and what types we buy. It also has Yogurt, fruit juice,Manuka honey, cinnamon,

He uses a blender to make sure that everything is blended well. It’s actually quite an easy recipe, if you want the oats to be softer you can soak them For an hour or so before you put them in the smoothie. Rolled oats work best, but quick oats can be used.

1/4 Cup of oats

1 cup of blackberries

1 cup of yogurt (Peyton uses peach)

1 cup of sliced strawberries

1 large ripe banana

1teaspoon of cinnamon

1 tablespoon of Manuka Honey

1/2 cup of juice .. Peyton uses peach juice from peaches

*here are two extras he adds but PLEASE check for food allergies…

1 Teaspoon of  peanut butter

1 Teaspoon of crushed almonds that he soaks in the oats

Mix everything together in a blender… Peyton adds a cup of ice as well to make it really nice and cold.

Monday’s Potpourri Blog

I absolutely love Potpourri… Especially in the fall and winter. I love having a pot of potpourri on the stove at low temperature, when it’s cold out. Nothing makes the house smell better, than apples, cinnamon etc.…

This blog isn’t really about Potpourri… Although, I do have a surprise at the end. It’s more about a mixture of different announcements in a blog. 😊

First and foremost I want to talk about this amazing podcast that I was on… It’s called “this podcast has autism”. It’s run by an autistic adult and his wife, who has anxiety issues. I also have another big announcement to make! Not only are we  launching Team Awesomism On September 15!! But I’m going to make some changes to this blog as well. I will be updating the theme and having a little different blogs structure.

Monday blogs… Will be written by me… About my current and past experiences as an Awesomism Mom…  as well as our family experiences.

Wednesday blogs… Will be by guest bloggers on a variety of topics. They will encompass everything from autism, stress, Anxiety and more.

Friday Food blogs… Will be our Friday food recipes … Where I will share recipes that we cook at home… As well as friends and family recipes, that they share.

Soothing Sunday blogs…This blog will be all about getting that “time out”… Even if it’s only for 10 minutes…I’ve got lots of cool surprises and I hope you join me in finding that 10 minute break… And soothing Sunday!

Remember I said I was going to have a surprise at the end of the blog… Well here is my fall/winter potpourri recipe that I’ve been making for years with my kids.

Start out with 6 to 8 cups of water depending on how big the pot is that you’re going to use. Add 3 Apples, I like to take ones that are a little bit past eating, but perfect for potpourri….slice them up into thin slices and put them in the pot. Add a third of a cup of brown sugar, yes brown sugar… A tablespoon of cloves… I like to use lemons, but you can use oranges, or have both.

Believe it or not, I add a little bit of maple syrup in it… Add 4 to 6 cinnamon sticks… And here’s my favorite thing to add… I add teabags… yes you read that right tea bags! My favorite to use is  wild sweet orange tea and Chai tea.  Sometimes I add a little bit of cranberries in it as well.

Turn it on the stove on low temperature… It will make your house smell like you’re baking. But PLEASE  make sure you check the water level, so that it doesn’t burn dry, as well as make sure you turn it off after a few hours. You don’t want to forget it’s on and have a fire.
