Easy English Muffin Pizza

Peyton absolutely loves pizza… He likes just about any kind of pizza. His favorite pizzas are the ones his dad makes. So when he is out on the oil rig, it’s a little difficult for me to make pizza anywhere near as good as his.

His dad will make some pizzas and freezes them so he can have them when he’s  gone. Needless to say he always wants to eat the pizza right away! 🙂

So I tried to come up with an idea so that he’ll like and still get some sort of pizza… I used to make these all the time for his older siblings when they were young. I decided to teach Peyton how to make them.

I know a lot of people make these, But I know with me… Sometimes I’m so busy I forget simple solutions to big things. By having Peyton be able to make these himself, it helps both of us out and allows him to create his own pizza.

It’s teaching him a life skill, as well as allowing me some extra time, because he’s making them himself. This way he can also decide what he wants to put on it.

His favorite one is with an English muffin, two slices of tomato, six pieces of pepperoni, skim mozzarella cheese…garlic and Italian seasoning… Sometimes he adds onions. *

We toast the English muffin lately. Then put a slice of tomato on each side. Top that with some skim mozzarella cheese and Italian seasoning with garlic. We then put that under the broiler for two minutes on high. Take it out… And three pieces of pepperoni to each side… Put a little bit more cheese on top of that, and back under the broiler for a minute and a half. **

This is great for lunch with a bowl of soup or you can make a couple of them.

Ingredients needed:

English muffin

Two slices of fresh tomato

Half a cup of skim mozzarella cheese shredded

Six pieces of pepperoni

Season to taste

*As with all Recipes… check for food allergies and use caution when using broiler.

**Cheese May be really hot use caution
